Facing the Bungo Sea and surrounded by lush mountains, Oita prefecture is blessed with some of Japan's best natural produce. Each month our menu is altered and every day small changes are made. Guests staying for a few days will experience a new treat each day.
Yufukaiseki
A totally innovative and original menu that uses seasonal ingredients.
Our tofu dish brings to mind images of the silky clouds seen around Yufuin in the morning. Naturally the tofu is handmade in our kitchen from the finest domestic soy beans and nigari. Of particular interest is our Kawari tofu that uses the season's choicest ingredients.
Food
Blessed by lush mountains and facing the sea, Oita prefecture is known as the "land of abundance". The sea and its immediacy are reflected in aquatic delicacies such as Usuki blowfish, Hita flounder and the mackerel Sekisaba and Sekiaji, which develop in the swift currents around Saganoseki. Nearby on the Kuju Plateau, Bungo beef and local chicken, Tomi-no-shamo, provide the freshest meat. Don't forget to sample these special dishes before you leave.
As we've tryed every extent possible to use local produce in our dishes, feel secure in the knowledge what you're eating has only traveled a short distance from the local farmer or fisherman. Our vegetables are organic or come from the clean river region of Kiyokawa, where no or little chemicals are used.
